Who doesn’t love a little Asian cuisine in their lives? The sour, sweet and spicy flavors and smooth and crunchy textures make for a wonderful, tasty treat! Unfortunately, it can all leave you feeling less than wonderful afterwards due to MSG and other unknown additives and ingredients. My husband and I started to have serious cravings for cashew chicken after our trip to Thailand but couldn’t stand the feeling we got after eating the dish from Asian restaurants in American. After trying several restaurants and winding up with that same yucky MSG-hangover, I decided to try making it at home with a veggie-packed MSG-Free recipe and it was an instant hit with the hubby! The cashew chicken was great with a traditional rice pairing but also super delicious in a tortilla wrap as we discovered when making a quick lunch with our leftovers. TortillaLand® makes uncooked flour tortillas that take only a minute to cook oil-free in a non-stick pan and they will change your life. After trying these TortillaLand Flour Tortillas you will honestly never want a ready-made tortilla again. I know the thought of uncooked versus cooked tortillas has probably never crossed your mind but I assure you, that first bite will be a wow moment and you’ll never look back.
You can also make your life a little easier with Tyson® Grilled & Ready® Chicken. Their chicken is 100% natural, made with all-white meat and already cooked to perfection! You can spare yourself the struggle in finding that delicate balance of thoroughly cooking but not overcooking raw chicken and just throw Tyson Grilled & Ready Chicken in a skillet for 3-5 minutes! If you fancy yourself a chicken connoisseur of sorts and have mastered that balance, Tyson also makes Fresh Boneless Skinless Chicken Breasts that work perfectly for the recipe when cut into bite-sized pieces!
Enjoy these delicious veggie-packed cashew chicken wraps inspired by beloved Asian cuisine without the yucky aftermath of MSG!
TortillaLand Flour Tortillas
Tyson Grilled & Ready Chicken (or Tyson Fresh Boneless Skinless Chicken Breasts)
2 peppers (whichever color(s) you like!), diced
1 broccoli, chopped into bite-sized florets
1/2 yellow onion, diced
3 cloves garlic, minced
1 cup cashews, unsalted
1 tbsp olive oil
1 tbsp sesame oil
3 tbsp soy sauce
2 tbsp honey
1 tbsp apple cider vinegar
1 tbsp sriracha (if you like it hot!)
Few handfuls of spring mix (or whichever type of lettuce you like!)
Wish-Bone® Italian Dressing
Wash all of your produce and chop, mince and dice as needed!
Heat olive oil and sesame oil on medium to medium-high in a wok or deep-sided skillet. Add onion and garlic and sauté until fragrant before adding chicken. Cook chicken thoroughly if raw or until softened if frozen.
Add remaining vegetables to your pan and sauté until softened, approximately 5-7 minutes.
Whilst your vegetables are cooking, mix soy sauce, honey, apple cider vinegar and sriricha in a small bowl until completely combined. Once your vegetables are cooked well, reduce heat to medium-low and add sauce mixture and cashews. Cook for another few minutes so all of the flavors come together!
While your concoction is stewing and brewing, cook tortillas in a large flat skillet for approximately thirty seconds on each side.
Place cooked tortilla onto a plate, fill with cashew chicken and wrap it up! Add some spring mix topped with my favorite full-flavored dressing, Wish-Bone Italian Dressing. Packed full of herbs, seasonings and flavors, this dressing will give a zesty boost of flavor to your simple side salad and dinner is served! You will likely have some of your delicious cashew chicken left over and this recipe makes for mm-mm-good leftovers so lucky you if you do! If your cashew chicken gets a little dry when thoroughly reheated on your stovetop, try adding a drizzle of that Italian dressing on top in your wrap for a worldly explosion of flavor!
