I’ve recently acquired a taste for sundried tomatoes and can’t get enough of them so I’m always looking for new recipes that incorporate their strong, distinguished flavor. I’ve heard of jalapeño hummus and roasted red pepper hummus and I thought, why not try making a homemade sundried tomato hummus! Glad I did because it’s delicious and now I can share it with you guys…

Ingredients
1 16oz can chickpeas, with liquid
2 oz sundried tomatoes
1/8 cup sesame seeds
1 clove garlic
Leaves from 2 small sprigs fresh rosemary
Juice of 1/2 lemon
Sea salt to taste
Olive oil, as needed to thin hummus
Prep
Easiest homemade snack ever because there is no chopping necessary! Simply throw first six ingredients into a blender (Vitamix is the best!) and slowly increase speed until all ingredients are smoothly blended. Add olive oil as need to achieve desired thickness and add salt to taste once hummus is fully processed.

Serve with warm baked or grilled pita bread for a healthy and delicious appetizer or afternoon snack!
